Preparar la pasta de pistacho:<\/strong><\/p>\n<p style=\"padding-left: 40px;\">\u2022 En un cazo peque\u00f1o, mezcla los 60 g de az\u00facar y los 30 ml de agua. Lleva la mezcla a fuego medio hasta que el az\u00facar se disuelva completamente, formando un alm\u00edbar ligero.<br \/>\u2022 Coloca los pistachos pelados en un procesador de alimentos y a\u00f1ade el alm\u00edbar de az\u00facar. Procesa hasta obtener una pasta suave. Si es necesario, a\u00f1ade una cucharada de aceite de pistacho o aceite vegetal para mejorar la textura. Reserva esta pasta.<\/p>\n<p><strong>2. Preparar la base del helado:<\/strong><\/p>\n<p style=\"padding-left: 40px;\">\u2022 En un cazo mediano, calienta la leche y la nata a fuego medio hasta que la mezcla est\u00e9 caliente, pero sin llegar a hervir. Retira del fuego y reserva.<br \/>\u2022 En un bol aparte, bate las yemas de huevo con los 150 g de az\u00facar hasta que la mezcla est\u00e9 p\u00e1lida y espesa.<br \/>\u2022 Vierte lentamente la mezcla caliente de leche y nata sobre las yemas, batiendo constantemente para evitar que las yemas se cocinen.<br \/>\u2022 Devuelve la mezcla al cazo y cocina a fuego lento, removiendo constantemente con una cuchara de madera o esp\u00e1tula, hasta que la mezcla espese lo suficiente como para cubrir el dorso de la cuchara. No dejes que hierva.<br \/>\u2022 Retira del fuego y a\u00f1ade el extracto de vainilla (si lo est\u00e1s usando). Deja enfriar a temperatura ambiente.<\/p>\n<p><strong>3. Combinar la pasta de pistacho con la base del helado:<\/strong><\/p>\n<p style=\"padding-left: 40px;\">\u2022 A\u00f1ade la pasta de pistacho a la base de helado enfriada. Mezcla bien hasta que se integre por completo. Para una textura m\u00e1s fina, puedes usar una batidora de mano.<br \/>\u2022 Cubre el bol con film transparente y refrigera la mezcla durante al menos 4 horas, o preferiblemente toda la noche, para que los sabores se desarrollen.<\/p>\n<p><strong>4. Mantecar el helado:<\/strong><\/p>\n<p style=\"padding-left: 40px;\">\u2022 Si tienes una heladera, vierte la mezcla fr\u00eda en la m\u00e1quina y sigue las instrucciones del fabricante para mantecar el helado.<br \/>\u2022 Si no tienes una heladera, vierte la mezcla en un contenedor herm\u00e9tico y congela. Remueve con un tenedor cada 30 minutos durante las primeras 3 horas para romper los cristales de hielo y obtener una textura cremosa.<\/p>\n<p><strong>5. Congelaci\u00f3n y servicio:<\/strong><\/p>\n<p style=\"padding-left: 40px;\">\u2022 Una vez que el helado tenga una consistencia cremosa, transfi\u00e9relo a un contenedor herm\u00e9tico y cong\u00e9lalo durante al menos 2 horas antes de servir.<br \/>\u2022 Sirve el helado en bolas, decorando con pistachos troceados y, si lo deseas, una hoja de menta fresca.<\/p>\n<p>\u00a1Y listo!
