Preparaci\u00f3n de la mezcla de chocolate:<\/strong>\n\n\u2022 En un cazo mediano, mezcla la leche entera, la crema para batir y el cacao en polvo. Calienta a fuego medio, removiendo constantemente con un batidor de mano hasta que la mezcla est\u00e9 bien combinada y caliente, pero sin llegar a hervir.\n\n<strong>2. Preparaci\u00f3n de la base del helado:<\/strong>\n\n\u2022 En un bol grande, bate las yemas de huevo con el az\u00facar hasta obtener una mezcla espesa y p\u00e1lida.\n\n\u2022\u00a0 Vierte lentamente una peque\u00f1a cantidad de la mezcla caliente de leche y cacao sobre las yemas batidas, batiendo constantemente para evitar que los huevos se cuajen.\n\n\u2022\u00a0 Vierte esta mezcla de yemas de vuelta en el cazo con el resto de la mezcla de leche y cacao, removiendo constantemente.\n\n<strong>3. Cocci\u00f3n de la mezcla:<\/strong>\n\n\u2022\u00a0 Cocina la mezcla a fuego medio, removiendo constantemente con una esp\u00e1tula de silicona, hasta que espese y cubra el dorso de la esp\u00e1tula (unos 82-85\u00b0C si usas un term\u00f3metro de cocina). No dejes que hierva.\n\n<strong>4. Enfriado de la mezcla:<\/strong>\n\n\u2022\u00a0 Pasa la mezcla a trav\u00e9s de un tamiz o colador fino en un taz\u00f3n resistente al calor para eliminar cualquier grumo.\n\n\u2022\u00a0 A\u00f1ade el extracto de vainilla y la pizca de sal, removiendo bien.\n\n\u2022\u00a0 Deja enfriar a temperatura ambiente y luego cubre el taz\u00f3n con film transparente. Refrigera durante al menos 4 horas, preferiblemente toda la noche.\n\n<strong>5. Mantecado del helado:<\/strong>\n\n\u2022 Si tienes una m\u00e1quina para hacer helado, sigue las instrucciones del fabricante para mantecar el helado.\n\n\u2022\u00a0 Si no tienes una m\u00e1quina, vierte la mezcla en un contenedor apto para congelador y col\u00f3calo en el congelador. Remueve vigorosamente cada 30 minutos durante las primeras 2-3 horas para romper los cristales de hielo y conseguir una textura cremosa.\n\n<strong>6.
